Last weekend was the first time I've cooked with Salmon (should do it more often, and eat more seafood more often).
Anyhow, a couple of reminders for me::
* If it has skin - then cook on meat side (presentation side) first for a couple of minutes, then the skin side (skin is more heat resistant so if you need to cook it longer then that's ok).
( For the salad that I made, the meat has to be crumbled, so it would be easier to use skinless salmon
* Only use a little bit of the honey/lemon sauce.
Straight No Chaser's Lion Sleeps Tonight.
Last weekend I made some yummy ice lemon tea:
1/ Put 6 cups of water into saucepan over a medium heat, and bring to the boil.
2/ While water is heating up, dissolve 1 cup of sugar into it.
3/ Take off heat
4/ Add 4 tea bags and 2 sprigs of mint
5/ Leave to cool
6/ When cool, take out the tea bags and mint
7/ Add 3/4 cup of lemon juice
8/ Freeze
Important to let it cool completely. This requires more time than making it in the mid afternoon and serving it for dinner that night. Ie: make the day (or more) before.
